Chef Team Leader

We are seeking a passionate and talented Chef Team Leader to join the Ventia team as part of the Defence and Social Infrastructure contract. This role will be based at Keswick on a full-time permanent capacity.
You will be supporting the Head Chef with daily mess operations and food service, including routine meals, in-flight rations, field rations and mess functions.

What you will be doing:
- Meal Service Coordination – Oversee the timely and efficient preparation and delivery of meal services by maintaining regular communication with the Head Chef. Ensure accurate meal forecasting and proactively manage any additional or unplanned needs.
- Kitchen Hygiene & Presentation – Ensure all kitchen areas are consistently clean, sanitised and presentable. Promote a culture of hygiene excellence and ensure compliance with health and safety regulations.
- Food Safety Compliance – Contribute to Ventia’s Food Safety Program by identifying hazards, applying controls and documenting incidents as required.
- Operational Support – Assist in the mobilisation of staff, equipment and facilities during surge operations or emergency contingencies. Ensure readiness and alignment with Defence Force operational plans.
- Equipment Maintenance – Monitor kitchen equipment and promptly report issues to the Head Chef to ensure timely repairs and minimal disruption.
- Inventory and Stock Control – Participate in stocktakes and inventory management, ensuring accurate records and effective stock rotation.
About you:
- Australian recognised Certificate III (or higher) in Commercial Cookery. (Essential)
- Previous proven experience in a similar role.
- Current Australian Driver’s Licence.
- Sound knowledge of Food Safety Standards, relevant legislation, and statutory obligations.
- Strong customer service, communication, and interpersonal skills.
Must be eligible to hold a Defence Security Clearance. As a result of this requirement the applicant must be an Australian Citizen.
